From Cherry Pie & a Hot Cup of Java: The Mar-T Cafe, North Bend Washington
Pre-heat oven to 350° F. Grease and flour a 13x9" pan.
In a large bowl combine:
2 | cups flour |
---|---|
1 | cups sugar |
2 | teaspoons baking soda |
1/4 | teaspoons salt |
2 | teaspoons cinnamon |
2 | teaspoons cloves |
4 | teaspoons nutmeg |
Beat into dry ingredients, and mix until smooth:
1 1/2 | cups vegetable oil |
---|---|
4 | eggs |
Mix in:
3 | cups grated carrots |
---|---|
1/2 - 1 | cup chopped walnuts |
Pour into pan. Cook 45 minutes to 1 hour at 350° F.
12 | ounces cream cheese |
---|---|
1 | teaspoon vanilla |
1/2 - 3/4 | cup powdered sugar |
Cream cheese and vanilla together. Sift in sugar to taste. Frost cake when cool.
