Zucchini Bread

A easy way to get rid of extra zucchini from the garden. A moist quick bread.

Pre-heat oven to 350° F. Grease and flour two 8 1/2" x 4 1/2" x 2 1/2" pans.

In a large bowl combine:

3cups flour
1tablespoon baking powder
1/2teaspoons baking soda
1 1/2teaspoons salt
2teaspoons cinnamon
1/2teaspoons ground cloves
1teaspoon nutmeg

In a separate bowl mix:

1/2cup milk
1/2cup vegetable oil
1cup sugar
2eggs
2cups shredded zucchini (do not peel just clean and grate)

Mix together and add:

1 - 2cups chopped walnuts (optional)
1cup fresh blueberries, in season (optional)

Pour into pans. Cook 50 minutes to 1 hour at 350° F.
