Satay Beef, Chicken or Tofu


From The Encyclopedia of Asian Food and Cooking

Cut into thin strips across the grain and place into bowl:

1 1/4lbs beef tenderloin, boneless chicken breast or firm tofu

Mix:

2tablespoons minced onion
1teaspoon minced garlic
1teaspoon ginger
2tablespoons kecap manis
1 1/2teaspoons minced lemon grass
2teaspoons ground coriander
1teaspoon chili powder
1tablespoon brown sugar
2tablespoons peanut oil
1/2teaspoon salt

Pour over meat, stir well and let marinate 4-6 hours.

Thread meat onto presoaked bamboo skewers and grill over charcoal until just cooked.

Serve with:

1sliced cucumber
peanut sauce
